This is a Certified Organic "Classic Oolong" Tea from the Lin Family Plantation in the mountains of central Taiwan, Spring Harvest. Its "Premium Grade" rating means that it is made with "the cream of the crop," the first flush of budding leaves plucked at precisely the right time by the plantations's best tea pickers in early Spring. As a Classic Oolong, it reveals a deep, earthy flavor when first sipped, then slowly releases its rich aroma and complex texture, leaving a slightly dry woody aftertaste in the mouth.

Our latest menu entry is the legendary High Mountain Oolong Tea from Li Shan ("Pear Mountain"), located in the central highlands of Taiwan, with plantations ranging to altitudes of 2,500 meters.

Prized for its fresh floral fragrance and smooth sweet flavor, Li Shan tea delivers its taste without a trace of bitterness in the mouth and displays a bright golden-green color in the cup.

We have only a limited supply of this rare vintage, which is organically produced, so devotees should add a few catties to their tea chests while our supply lasts.

We have gained access to a supply of one of Taiwan's best vintage teas, San Lin Hsi ("Cedar Grove Stream"), grown on an old plantation located at 1,800 meters altitude in the central highlands of Taiwan. This is one of the few areas that was not devastated by the 2009 typhoon. San Lin Hsi displays the crisp, clear ching hsiang ("light & fragrant") flavor for which Taiwan oolong is so famous.

It's fresh floral overtones, laced with a trace of fruity flavor, produce a rich smooth taste when the tea first hits the palate, followed by a subtle dry aftertaste that clears and soothes the whole mouth. An excellent early morning tea and at $40 for 300 grams represents excellent value.

"Bao jung" means "paper wrapped variety", this lightly oxidized oolong was first developed about 150 years ago in the famous Wu Yi Mountain area in Fujian, China. Only young tender leaves are picked for this delicate varietal & therefore this tea is fired, finished, and packed in loose leaf form, like Oriental Beauty. In order to prevent the subtle aromas of this new varietal from dissipating when the cream of the crop was shipped to Peking as a "tribute tea" (gung cha) for the emperor & his court, it was carefully wrapped in double layers of thick paper and formed into small square packets for storage. Today, Bao Jung’s delicate flavor is protected in vacuum sealed packets like our other oolong varietals, so it's no longer "paper wrapped" although it still carries the original name.
